Description
This pecorino, aged over 300 days, is covered on the surface by natural moulds, but it hides inside a paste rich in taste, that offers a host of different sensations. In fact, a rare process of natural re-fermentation produces a continuing “metamorphosis” making the paste ever creamier with the passage of time.
Suggestions
To be accompanied simply by a full-bodied red wine.
