It is made by boiling the whey of raw milkRaw milk does not undergo any thermal treatment, thus preserving intact its organoleptic and sensory characteristics. with the addition of sheep milk. Owing to its protein content, rich in amino acids of high biological value, and easily digestible, it is ideal in many people’s diet.
Suggestions
Excellent by itself or as a dessert if sprinkled with sugar or accompanied by honey and Vin Santo dessert wine. Ideal with salad and fresh seasonal vegetables with a tad of extra virgin olive oil from San Gimignano. Excellent as an ingredient for the preparation of sweets, savoury flans, and homemade pastas such as ravioli or spinach gnocchi.
