Cheese is a product which undergoes an evolution as time passes. There is a need for it to be handled with care so that it may maintain all of its tasty and nutritious qualities.
Here are some precautions to consider: keep it in a fresh place, well ventilated and humid, at a temperature between 41 and 49 degress Fahrenheit.
A particularly suitable place would be the vegetable compartment of the refrigerator. In order to retain its freshness and taste, keep it in a plastic container or wrapped in aluminum foil or plastic wrap.
During the seasoning it is a normal thing that mould appears on the cheese. So it is necessary to brush, wash and dry the cheese. At least 3 hours before serving , take the cheese from the refrigerator , remove its shell and keep it at room temperature until it regains its flavor and softness.
Now taste the cheese starting from the heart of the piece to the rind. This is the right way to make a tasting, because the flavour of the cheese grows from the centre to the rind.
